Preheat oven to 375°F.
Peel, core, and slice apples. Mix together apples, brown sugar, cinnamon, and nutmeg. Spread in a buttered 9 x 13-inch pan.
Cut margarine or butter into pieces. Combine quinoa flakes, Featherlight, brown sugar, cinnamon, and margarine or butter in a medium bowl. Pinch together with fingers until sandy and crumbly. Sprinkle topping over apples.
Bake until apples are tender and topping is browned, 30 minutes. Cool slightly and serve warm with whipped topping or ice cream.
