Preheat oven to 350°F.
Mix coconut, condensed milk, and vanilla together. Scoop cookies onto a well greased cookie sheet.
Bake for 10 to 15 minutes. Cookies will be golden brown on the bottom. Remove cookies from pan promptly, as they will stick to the pan if you let them sit very long.
Once cool, dip the bottoms of the macaroons into melted chocolate.
