Chocolate Marshmallow Treats

Ingredients

1/4 cup margarine or butter
40 marshmallows or 4 cups mini marshmallows
1/2 to 1 cup sweetened coconut
6 cups Post Cocoa Pebbles* crispy rice cereal

Directions:

In a heavy saucepan, melt margarine and marshmallows over medium-low heat, stirring continuously to prevent burning. Resist the urge to turn up the heat. The higher the heat, the tougher the final product will be to chew.

Once the marshmallows are melted, add the coconut and cereal. Stir well.

Butter an 8 x 8-inch or 9 x 13-inch pan, depending how thick you want your treats to be. Pour treats into the pan and press them smooth using a sheet of plastic wrap to keep hands from getting sticky. Let cool. Cut into bars to serve.

*This cereal is gluten free as of 2006, but since companies frequently change their recipes, always check the labels.
