Dressing:
Combine the olive oil, vinegar, garlic, mustard, Parmesan cheese, oregano, salt and pepper in a bowl; mix well.
Salad:
Combine the pasta, spinach, tomatoes, green onions, olives, and feta cheese in a salad bowl. Add the dressing; toss to coat well. Chill until serving time.
Fun Fact: Everyone knows that spinach is loaded in iron and that’s what makes Popeye stronger than the average man. And just look what spinach has done for Popeye's career.
Actually, Popeye was wrong! and that’s because a food analyst (in 1957) made an error while calculating the iron in spinach. His decimal point was off by one place, and he reported that spinach contained ten times as much iron content as it really did!
