Take a large cucumber and peel and slice it thinly. Put into a bowl and salt lightly. Let stand for about 1/2 hour. Then press the slices between your hands to press out all of the water. Put the pressed slices into a bowl and add remaining ingredients. Mix well. Sprinkle with paprika and serve.
Fun Fact: No wonder cucumbers are a summertime favorite…the inner temperature of a cucumber can be up to twenty degrees cooler than the outside air. Maybe that’s where the phrase “cool as a cucumber” comes from.
