Coq a Vin Simplified

Ingredients

3 medium potatoes, peeled, cut in chunks
3 carrots, peeled, cut into pieces same size as potatoes
2 medium onions, also cut into same size chunks
4 chicken breasts or thighs
2 cups red wine (preferably Pinot Noir)
salt and pepper to taste
water to cover

Directions:

Place all ingredients in a crockpot. Use enough water to cover. Cook on HIGH overnight or about 8 hours.
