Cream together shortening, sugar, salt, egg yolks, and flour and spread on 9x13x2-inch pan. Cover with peach preserves. Beat egg whites until stiff. Add sugar and vanilla to whites. Spread on top of preserves. Sprinkle chopped pecans on top, or coconut, or both. Bake at 350° for 35-40 minutes.
