1. Prepare the chutney, ginger-garlic paste, and chaat masala. In a large non-reactive bowl, mix together the ginger-garlic paste, salt, and the lamb, and refrigerate about 2 hours.
2. Add the yogurt, green chutney, garam masala, and chaat masala to the lamb, and mix well. Then, heat both the oils in a small nonstick saucepan over medium-high heat, add the paprika, quickly pour into the bowl with the lamb, and mix well.
