Scratch muffins are quick and easy to prepare. Double or triple the recipe and freeze some for later. Or faster yet, purchase lowfat, low-sugar, whole-grain muffins or muffin mixes at your grocery store. Or simply use regular whole-wheat or cracked-wheat breads and rolls instead.
Make certain you know the fat content of store-bought muffins. Some of the jumbo bakery muffins contain 20 to 30 fat grams each and some are also very high in sugar. If your bakery can't provide you with nutrition facts about their muffins, don't eat them. Your local bakery might even make "your" lowfat, high-fiber recipes. Ask if you can special- order large quantities. Then freeze them in freezer bags for future use.
