Place zucchini in a colander sprinkle with salt and let drain well, squeezing out extra moisture. Add to a large mixing bowl stir in eggs, Parmesan cheese and half of each of the Cheddar and mozzarella cheeses spread into a greased 13" x 9" baking pan. Bake at 400 degrees for 20 minutes. While baking, brown beef with onion drain. Mix in tomato sauce and seasonings heat thoroughly. Layer over baked zucchini sprinkle with remaining cheeses. Arrange peppers and olives over the top before serving.
TIP: Make Veggie Pizza Casserole with your favorite veggies...try it with yellow squash, carrots or even eggplant. Just shred veggies in place of zucchini and continue with recipe as usual. It'll be a summertime favorite!
