Perfect Baked Sweet Potatoes

Ingredients

4 medium sweet potatoes
safflower oil

Directions:

Preheat oven to 400°. Wash and scrub potatoes; dry thoroughly. Coat potatoes lightly with oil. Prick surface with fork. Bake until tender, about 40–60 minutes.

Note: Rubbing potatoes with oil before baking makes them so creamy, they do not need additional butter.
