Sukiyaki

Ingredients

6 - 8 shiitake mushrooms (half-dollar size), slivered
2 cups water, divided
1 medium round onion or green onions, slivered
1 teaspoon sesame oil
pinch sea salt
1/4 cup low-sodium soy sauce
2 - 4 tablespoons maple syrup
1 1/2 cups bamboo shoots
1 (3-ounce) package cellophane noodles, soaked in 2 cups boiling water
2 - 3 carrots, sliced into matchsticks
4 cups watercress
2 -3 cups mung bean sprouts
4 cups won bok cabbage
1/2 block tofu (about 6 ounces)

Directions:

Rinse the shiitake mushrooms and soak in 1 cup of water. Save the water for sukiyaki stock.

Sauté slivered onions and slivered mushrooms in remaining 1 cup water and sesame oil. Sprinkle some sea salt to prevent sticking. Add mushroom water and season to taste with low-sodium soy sauce and maple syrup. Add bamboo shoots to mixture, bring to a boil, and simmer at a low boil. Add soaked and drained cellophane noodles to mixture. Sprinkle julienned carrots. Layer watercress, bean sprouts, won bok, and tofu. Cover and allow layers of vegetables to be steamed.
