Put grated zucchini and onion in mixing bowl and add basil, salt and pepper to taste. Add flour and toss. Stir in egg. Put oil in a 10-inch nonstick skillet and place over medium heat until oil ripples, then reduce heat to low. Drop zucchini batter by heaping tablespoons into pan to make 3 fritters at a time. Cook until golden brown on both sides, 5–6 minutes total. Serve hot and sprinkle with cheese, if desired
