Tuck a casserole or two away in your freezer for those inevitable rushed-day dinners. Here’s a super-simple way to freeze a one-dish meal in foil so that you don’t tie up your baking dishes.
Lightly grease an ovenproof casserole or baking dish. Line the dish with a sheet of foil large enough to bring the edges together to fold and seal. Place the casserole mixture in the foil-lined dish. Bake it according to the recipe directions, or leave it unbaked.
After the casserole or stew has cooled, bring the edges of foil together and seal tightly, making sure the foil touches the top of the mixture to shut out any air. Freeze it until firm.
Lift the frozen casserole from the dish. For additional protection, wrap the casserole in another layer of foil or place it in a freezer bag. Label the outer wrap with casserole name, date frozen, use-by date, number of servings and reheating or baking instructions. Return the labeled casserole to the freezer.
When ready to use the casserole, place it in the original baking dish. Thaw in refrigerator reheat or bake. (If baking directly from freezer to oven, add additional baking time see individual recipes for specific baking time.) (Note: When using a microwave oven to bake or reheat, remove the foil first.)
