1. In medium saucepan, combine all ingredients except cilantro. Bring to a boil over high heat. Reduce heat to medium cook 15 minutes, stirring occasionally.
2. Stir in cilantro. Ladle mixture into clean jars or nonmetal containers cover with tight-fitting lids. Store in refrigerator for up to 5 days or in freezer for up to 2 months. Serve hot as a relish or sauce, or cold as a dip for chips.
