Cook potatoes in water to cover thoroughly, about 15–20 minutes. Make sure they’re really soft. Drain, and use an electric mixer to combine with rice milk, olive oil, and salt. Beat until fluffy.
Variation
For added flavor, add 3 cloves roasted garlic, or 2 Tbsp. parsley, or both.
