Saffron Jasmine Rice

Ingredients

1 tablespoon finely minced shallot (or onion)
1 tablespoon olive oil
1 cup jasmine rice
1 pinch saffron crumbled
2 cups water or low salt chicken broth
salt to taste

Directions:

Sauté shallot in olive oil in medium saucepan over medium heat until soft. Add rice and stir, crumble in saffron, add water or broth, and salt to taste. Bring to a boil, reduce heat to low, cover, and cook at a simmer for 20 minutes.
