Preheat oven to 475 degrees. Peel potatoes if you like. Cut in half horizontally, and then cut the halves down the middle vertically. Lay flat side down on cutting board and slice horizontally into 1/4-inch-thick steak fries. Pour olive oil on a cookie sheet. Toss potatoes with olive oil. Sprinkle with salt and pepper. Cook about 30 minutes, turning once. They are done when they’ve started to brown up a bit.
