1. Place the pine nuts in a food processor and pulse until smooth. Add all the remaining ingredients and blend until completely incorporated.
2. Use the dressing immediately or place in a covered container and refrigerate until ready to use. If refrigerating, allow the dressing to return to room temperature and stir vigorously before using.

When blended, pine nuts and cashews have a creamier consistency than other nuts.
