1. Place the oranges, onion, and dressing in a medium bowl and toss together. Let marinate for 15 minutes at room temperature.
2. Place the arugula in a large salad bowl. Add the orange-onion mixture and gently toss.
3. Scatter the olives and walnuts on top of the salad and serve immediately.
For a Change . . .
* Substitute red or pink grapefruits for the oranges.
* Add 1/2 cup crushed raw or untoasted pistachio nuts to the finished salad before serving.
Tip . . .
To store the arugula, wash and dry it and wrap it in a paper towel before placing in an airtight bag in the fridge. It will last longer this way.
