1. Cut each avocado in half and discard the pits. Scoop the meat out of the shells and place it in a food processor.
2. Add the remaining ingredients to the food processor and mix until smooth and creamy.
3. Scoop the mousse onto serving plates and serve.
For a Change . . .
* Use hazelnut extract instead of the almond extract for a delicious variation.
* Top each serving with a heaping tablespoon of finely chopped raw almonds or hazelnuts.
