Marinara Sauce


Serves: 5

Ingredients

2 cups sun-dried tomatoes
4 cups cold water
4 cups garlic
1 cup raw or untoasted pine nuts
1 cup coarsely chopped fresh basil
1 cup coarsely chopped fresh cilantro leaves
1/2 cup cold pressed extra virgin olive oil
1 teaspoon sea salt

Directions:

1. Soak the sun-dried tomatoes in the water for 1 hour, or until soft. Reserving the soaking water, drain the tomatoes.

2. Place the tomatoes in a food processor. Add all of the remaining ingredients except the soaking water, and pulse until fully incorporated. Gradually add the reserved tomato water until sauce reaches the desired consistency (you may not use it all).

3. Use immediately, or transfer the sauce to a container and refrigerate until ready to use.

For a Change . . .
* Add any of your favorite spices to the sauce, such as oregano or thyme.

FYI . . .
*Pine nuts are a natural source of pinolenic acid, a beneficial hormone stimulant. They are also rich in magnesium, which helps relieve muscle cramps and tension.
