1. Place the mushroom caps gill-side up on a large, shallow plate. Drizzle with the vinegar and set aside.
2. Place all of the remaining ingredients in a medium bowl and mix well. Let marinate for 15 minutes at room temperature.
3. Spoon the tomato mixture onto the mushroom caps and serve.
For a Change . . .
* Add 1/2 cup chopped kalamata olives to the salad ingredients before letting them marinate.
* Sprinkle 2 tablespoons capers over the filled mushroom caps.
* Use all red or all yellow grape tomatoes instead of combining the two.
FYI . . . One medium tomato provides up to 40 percent of the Recommended Daily Allowance (RDA) of vitamin C!
