Italian Chicken

Ingredients

4 boneless skinless chicken breast halves
2 (14 1/2-ounce) cans Italian style stewed tomatoes
1/2 teaspoon oregano
2 tablespoons cornstarch
1/4 cup Parmesan cheese

Directions:

Preheat oven to 425°. Wash chicken, and place in lightly greased 2-quart baking dish. Cover dish with foil, and bake 15 minutes in preheated oven; drain juices. In saucepan, combine tomatoes, oregano, and cornstarch, and cook until thickened. Pour sauce over chicken, then top with Parmesan cheese. Bake until chicken is done, about 10 minutes.

Editor’s Extra: Add a few dashes hot pepper sauce to jazz it up a bit.
