Combine rice, sour cream and salt; spoon half of mixture into a greased 13"x9" baking pan. Sprinkle with Monterey Jack cheese; top with green chiles. Spread remaining rice mixture over the top; sprinkle with Colby cheese. Bake at 350 degrees for 30 minutes.
Tip: Stuffed tomatoes or summer squash are a delicious way to serve rice or dressing! Scoop out the pulp and prebake for 10 minutes at 350 degrees, then fill and bake for an additional 10 minutes, until hot. Sprinkle with herbs or grated cheese, if you like.
