California Casserole was the first main dish to capture a Grand Prize, at the eighth Bake-Off® Contest in 1956, and is a good example of how the question of cooking quickly and spectacularly is solved. Margaret Hatheway took an Austrian dish and made the sauces easy by starting with a base of canned cream of chicken soup. It's the kind of dish that seems like it would take half a day's labor--but doesn't. The 1959 contest's Crab Meat Salad Pie was a typical country-club-type dish that Evelyn Robinson adapted for home cooks, another example of impressive fare that can be put together without denting a busy schedule. More recent recipes, like 1994's Italian- and French-influenced Spicy Broccoli Aïoli Pizza, reflect today's interest in international flavors. Every Bake-Off® Contest dish, however, expands on the most significant of perennial yet contemporary cooking trends: convenience.
