Wash potatoes thoroughly; microwave or boil until fork pierces easily. Peel and mash, adding butter, seasoning, and cheese. Set aside to cool.
Filling:
Preheat oven to 400°. Cook sausages thoroughly. Drain on cookie sheet lined with paper towels. While sausages are cooling, on a floured surface, pat potato mixture out to 1/4 inch thick. Divide into 12 equal parts. Place 1 sausage in the center of each piece. Using a spatula or scraper, lift from work surface and mold potato mixture around sausage. Place wrapped sausage in a greased baking dish, being sure to make only 1 layer; do not stack. Bake approximately 20 minutes or until golden brown.
