Sift together all dry ingredients into mixing bowl. Cut in shortening. Add 1 cup applesauce and eggs; beat 2 minutes. Add remaining 1/2 cup applesauce. Beat 1 minute. Mix in dates, raisins, nuts, and cherries. Pour into greased 9x9-inch cake pan, sprinkle with topping, and bake in 350° oven for 50–55 minutes.
Topping:
Sprinkle over top of cake before baking.
