Kay's Lime Pie

Ingredients

1 envelope unflavored gelatin
1/2 cup sugar
1/4 teaspoon salt
4 egg yolk
1/2 cup fresh lime juice
1/4 cup water
1 teaspoon grated lime rind
few drops green food coloring
4 egg whites
1/2 cup sugar
1 cup heavy cream, whipped
1 (9-inch) pie shell, pastry or crumb

Directions:

Thoroughly mix gelatin, sugar, and salt in saucepan.

Beat together egg yolks, lime juice, and water and stir into gelatin mixture. Cook over medium heat, stirring constantly until mixture comes to a boil.

Remove from heat and stir in grated peel. Add food coloring sparingly to give a pale green color.

Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

Beat egg whites until soft peaks form; gradually add 1/2 cup sugar, beating to stiff peaks. Fold gelatin mixture into egg whites. Fold in whipped cream and pile into crust.

Chill until firm. Spread with additional whipped cream and edge with grated lime peel. Garnish with wedges of lime.


Fun Fact: Pie Town, New Mexico—The first merchant in town had such a demand for homemade pies, and they were of such quality that they became justly famous. Local folks as well as travelers began to refer to the community as “Pie Town.” And that's how it got its name. Pie Town is located along U.S. Route 60, approximately 2.5 hours’ drive from Albuquerque and 5.5 hours' drive from Phoenix.
