Cook the potatoes in a vegetable steamer over simmering water for 20–30 minutes, until just tender.
Melt the butter in a heavy skillet, and add the onions and 1 tablespoon of the seasoning mix. Sauté over medium heat until the onions are limp and translucent, about 10 minutes. Do not let them brown. Add the potatoes, and sprinkle with the remaining 1 tablespoon seasoning mix. Sauté over medium heat until golden brown and crisp, about 15 minutes. Dot with more butter for added flavor.
For Home Fries Seasoning Mix:
Combine all the ingredients in a large jar or other covered container. Shake to mix well. This will last up to 6 months.
