Beat egg yolks and the whole egg until light colored.
Beat egg whites until stiff.
Fold the egg yolk mixture into the egg whites and continue beating for another 15 minutes until mixture becomes thick and spongy.
Preheat oven to 350 degrees. Pour into a 2-inch well-greased baking dish and set into another pan with a little water. Bake for 15 minutes.
Meanwhile boil sugar and water together until you can spin a thread with a spoon. Add vanilla.
Unmold the baked egg mixture and puncture with a toothpick or an ice pick and pour the boiled syrup over the top and let rest until the following day.
