Reserve about a dozen strawberries to be used as a garnish. Beat remaining strawberries in a blender.
Dissolve strawberry gelatin in boiling water.
Mix the blended strawberries into the strawberry Jell-O and let cool.
Beat egg whites until stiff. Add sugar. Whip the cream. Save some of the whipped cream to be used as garnish.
Fold the whipped cream into the egg white mixture. Fold in the strawberry mixture.
Pour into a transparent serving bowl and refrigerate.
Garnish with the reserved whipped cream and strawberries that have been dipped in a simple syrup until it turns caramel color. Add a little lemon juice to the simple syrup.
Pour into a lovely dish to mold.
NOTE: To make the simple syrup, boil together 2 cups sugar and 1 cup water until you can spin a thread.
