Sweet Milk

Ingredients

1 quart fresh cow's milk
2 cups sugar

Directions:

Typical and delicious and you can use many ways: between layers of a cake before you ice it, over ice cream, spread on bread, or just eat a little and enjoy. Doce de Leite is often put on a dessert table in a compote dish.

Cook milk in a heavy sauce pan over very low heat. Add 2 cups sugar. Stir frequently to avoid scorching.

Cook on top of the stove about 60–90 minutes until it is thick, about the consistency of cream. In the final stages you will need to stir constantly. When finished, it will pull away from the edges of the pan.

NOTE: In Spanish-speaking countries in Latin America, this is called dulce de leche. You can flavor with a little vanilla.

As a candy, continue cooking to a firm ball stage. Cool and beat. If necessary, add 1 tablespoon of powdered sugar. Cool and cut into squares.

Optional, add 1 cup nuts.

NOTE: A short cut to making this dessert would be to puncture 2 cans of sweetened condensed milk and cook in a pan of hot water for 2 hours.
