Orange Pudding

Ingredients

12 egg yolk
8 egg whites
1 orange rind, grated
1 1/2 cups sugar
1 1/4 cups fresh orange juice
1 cup sugar

Directions:

Beat egg yolks and then add egg whites. Grate and add the rind of one orange. Add sugar and then 1 1/4 cups fresh orange juice. Stir fry sugar in a heavy pan until golden brown. See Caramel Pudding, (Desserts chapter) for how to prepare pan with caramelized sugar and the baking/cooking instructions.

Heat in the same way as Pudim de caramelo (see Caramel Pudding, Desserts chapter).
