Chuchu is a very popular vegetable in Brazil, but cayotes is not very well known in the United States. You could substitute zucchini if you peel zucchini and remove the seeds. Cayotes would also be peeled and the seeds would be removed. It could be boiled in salt water and served with butter, or the cooked chuchu could be arranged on a platter and served with a white sauce with freshly grated Parmesan cheese on top.
