Fried Okra


Serves: 4

Ingredients

12 okra (about)
2 tablespoons cooking oils
1 chopped onion
3 chopped tomatoes (without skin or seeds)
salt and pepper
1 teaspoon lemon juice or vinegar

Directions:

Wash the okra and soak in lemon juice or vinegar.

Heat a good sized frying pan and add cooking oil. When hot, add onion, tomatoes, salt and pepper.

Add the fried okra and cook until tender.

MENU SUGGESTION: serve with Picadinho (see Meats chapter) or Angu (see Accompaniments chapter). Mold the Angu in a tube pan. Unmold on a large round plate. Put the Picadinho in the center of the mold and the okra as prepared above around the edge.

SUGGESTION: very typical. Prepare the okra as above, but add 1 pound of small shrimp and serve with Brazilian Rice (see Rice chapter).
