Couve (collard greens) is another vegetable that is very commonly eaten in Brazil, but not so popular in the United States. If you cannot find collard greens, you could substitute broccoli leaves. It is most commonly eaten with Feijoada—the Brazilian Black Bean dish
Wash the collard greens and discard the outer tough leaves. Stack the leaves and roll making it easier to cut into thin strips. Wash again and drain in a colander. Heat a large frying pan and add shortening. When hot, add onion, garlic, and collard greens. Stir fry. This should be served immediately to maintain its beautiful green color. Do not over cook, or it will become yellow.
