Potato Roll


Serves: 4

Ingredients

1 pound potato
3 eggs
1 cup milk
3 tablespoons flour
bread crumbs

Directions:

Peel, cook potatoes in salted water and mash. Add eggs, milk, and flour and mix well. Pour into a well greased baking dish and sprinkle with bread crumbs.

Bake at 375 degrees until brown.

Turn out onto a paper towel or dish towel sprinkled with bread crumbs and roll like a jelly roll. Sprinkle with Parmesan cheese and serve hot.

You could also roll cooked spinach into the roll and serve with a Tomato sauce (see Pastas chapter).
