Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg and brown sugar in a large bowl. In a separate large bowl, beat egg yolks. Stir in buttermilk and mashed bananas; stir in dry ingredients until well blended; set aside. Using an electric mixer at high speed, beat egg whites until stiff peaks form. Fold into batter. Gently stir in butterscotch chips. Heat a waffle iron and spray with non-stick vegetable spray. Pour the recommended amount of batter onto the iron and cook according to manufacturer’s instructions until golden. Serve with maple syrup or butter, if desired.
Dress up a store-bought stocking in a flurry. Use a pencil to lightly draw a star on the front. With a needle and craft thread, sew buttons directly on the stocking over the star outline.
