Norwegian Pancakes

Ingredients

1/3 cup sour cream
1/3 cup cottage cheese
2 eggs, beaten
1/4 cup all-purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1 (15-ounce) can sliced peaches
1 tablespoon cinnamon
1 tablespoon brown sugar, packed
optional: whipped cream

Directions:

In a medium bowl, combine sour cream and cottage cheese. Stir until well blended. Add eggs, blending well. Whisk together flour, sugar and salt; add to egg mixture. Pour batter onto a hot greased griddle by 1/4 cupfuls. When bubbles form around pancake edges, turn and cook until other side is golden. Combine peaches, cinnamon and brown sugar in a saucepan over medium heat; cook just until hot. Top each pancake with a large spoonful of warm peaches. Add a dollop of whipped cream, if desired.


Arrange holiday mugs, spoons, a couple of cinnamon sticks and a favorite spiced cider recipe on a vintage serving tray for a thoughtful gift.
