Vinaigrette:
Crush garlic with salt. Add mustard and pepper. Beat in oil by tablespoons alternately with vinegar. Refrigerate overnight. Remove garlic, if milder flavor is desired.
Marinate beans in Vinaigrette and chill. Fry bacon until crisp; crumble. Chop egg whites and mix with mayonnaise and lemon juice. Arrange beans like spokes around center of egg white mixture. Sprinkle bacon onto beans, and sieve the egg yolks over all.
