Dissolve Jell-O in boiling water. Combine Jell-O mixture, mayonnaise, and horseradish in blender until smooth. Stir in pineapple and pimentos. Lightly oil or spray a 7x11-inch pan, or use mold. Chill until firm.
Fun Fact: Metairie, Louisiana, is home to the longest bridge over water in the world, the Lake Pontchartrain causeway. The causeway connects Metairie with St. Tammany Parish on the North Shore. The causeway is 24 miles long.
