Partially mash potatoes with potato masher or fork. Add onion, pimento, mustard, mashed boiled eggs, pickles, mayonnaise, and salt and pepper. You may need more mayonnaise; you want it smooth and not dry. It is better to make this salad when potatoes are hot. Let cool and serve in lettuce cups.
