1/2 cup dried parsley flakes
1/4 cup thyme
1/4 cup celery flakes
2 tablespoons marjoram leaves
5 bay leaves, crushed
Mix herbs together in small bowl. Cut 16 4-inch squares of cheesecloth. Place 1 tablespoon herb mixture in center of each square. Bring corners together and tie bundle with string. Store in an airtight container in a cool, dark place. Use to flavor stock for soups and sauces, and for poaching fish and chicken. Drop one packet into 1 quart of stock; simmer at least 20 minutes or according to recipe directions. Remove packet and discard before serving.
Gift Container: Arrange packets in a small flowerpot, basket, or recipe card box. Write the directions for use and storage on a recipe card to include with the gift.
