3 quarts apple juice
3 boxes powdered pectin
15 cups sugar
For each layer (see below) combine 1 quart apple juice (bottled, canned, or reconstituted frozen), food coloring, flavoring, and 1 box pectin in heavy saucepan and bring to full boil. Add 5 cups sugar and bring to boil again. Boil 2 minutes. Remove from heat; skim. Pour into hot, sterilized jars about 1/3 full. Let set 2 hours. Repeat with colors and flavors. When last layer is set, pour thin layer of paraffin on top. Cover with lids. Makes 6 pints.
Minted Apple: Add about 5 drops green food color and 1 1/2 teaspoons peppermint extract to apple juice.
Cinnamon Apple: Add 1/3 cup red cinnamon candies to apple juice.
Lemon Apple: Add juice of 2 lemons to apple juice.
