1 orange rind grated and juiced
2 pears
2 apples red
1/2 cup raspberries
1/4 cup almonds slivered
2 tablespoons coconut flakes
Grate small amount of peel from orange; then cut and juice orange. Core pears and apples, cut into chunks, and add to orange peel and juice. Gently fold in raspberries (may substitute with blackberries [fresh or frozen]) and slivered almonds. When ready to serve, spoon into a lettuce leaf and sprinkle with coconut.
