1 8-ounce package tortellini noodles
2 stalks broccoli cut into flowerets
3 carrots, peeled and sliced
1/2 cup green onions, chopped
1/2 cup red peppers, chopped
1/2 cup green bell peppers, chopped
1/2 cup mayonnaise
1 teaspoon orange peel grated
1/2 teaspoon thyme
1 teaspoon basil
1 teaspoon salt
1/4 teaspoon black pepper
8 leafs lettuce
3/4 cup mozzarella cheese, shredded
Cook tortellini in boiling, salted water about 15 minutes or till tender. Drain and cool under cold running water. Steam broccoli and sliced carrots till tender crisp. Cool under cold running water. Combine tortellini, broccoli, carrots, green onions, and red and green peppers. Mix mayonnaise, orange rind, and seasonings. Pour over tortellini mixture. Toss to coat.For each serving line a salad plate with lettuce. Spoon on a mound of salad mixture. Sprinkle with 1 tablespoon shredded cheese. Serve chilled or at room temperature.
