Slice cucumbers lengthwise into very thin slices with a vegetable peeler. Soak (for one hour or more) in 1 1/2 quarts ice water to which 2 tablespoons salt has been added. Drain cucumbers. Peel onion and slice very thin, separate rings and toss with cucumbers. Combine vinegar, salad oil and 2 tablespoons water. Pour over vegetables and toss until well coated. Grind pepper over all to taste.
