1. Sift together dry ingredients.
2. Heat raisins in apple juice until raisins are soft and puffy. (Takes about a minute in the microwave oven).
3. Puree raisins with juice in blender
4. Add egg, oil, vanilla, and banana. Blend
5. Add to dry ingredients and stir lightly. Fold in carrots.
6. Spray a loaf pan or 12 muffin cups with nonstick vegetable cooking spray. Spoon in batter.
7. Bake at 350° about 45 minutes for loaf or about 25 minutes for muffins.
8. After cooling, cut loaf into 12 slices.
