Slice all ingredients and place in a 12-inch Dutch Oven. Sprinkle with Italian Seasoning. If available use fresh herbs instead. Oregano, thyme, sage, rosemary, basil, or marjoram will work. Use all of them or any three for an Italian flavor.
Add water or wine and steam for about 15 minutes with 10-15 coals on the bottom.
